Dielectric properties of honey adulterated with sucrose syrup

چکیده
Sucrose syrup is a common additive in honey adulteration. To provide information for developing a cheap, simple, convenient and rapid sucrose–adulterated honey detector or sucrose content sensor, the permittivities of pure jujube, yellow-locust and milk-vetch flower honey, pure sucrose syrup and honey–sucrose syrup mixtures with sucrose content from 0% (pure honey) to 80% (pure sucrose syrup) were studied from 10 to 4500 MHz with open-ended coaxial-line technology and a network analyzer at room temperature. The correlations between permittivities and sucrose contents were regressed. The results showed that the dielectric constants of all samples decreased with increasing frequency, while the pure honey had higher dielectric constant than pure sucrose syrup. Dielectric relaxation existed in all samples. The maximum loss factor decreased with increasing sucrose content. The relaxation frequency changed very little with sucrose content. Strong negative linear correlation, R > 0.98, was found between loss factor around the relaxation frequency and sucrose content. Crown Copyright 2011 Published by Elsevier Ltd. All rights reserved.

Detection of Foreign Enzyme Addition into the Adulterated Honey
Natural honey contains several enzymes, which are produced by bees (salivary secretion) and some are found in the nectar or pollen. The most important enzymes are amylases, invertases, glusidases, catalases, fosfatases and other. The activity of diastase (α-, β-, γ-amylase) is the important quality parameter of honey, according to the Directive 2001/110/CE the diastase activity (diastase number...
متن کاملHigh Fructose Corn Syrup: A Potential Feed for Honey Bee
The honey bee obtains its all nutritional demands from nectar and pollen. In the case of nectar and pollen limitation, beekeepers use a substitute. It has been a long time that sucrose is used as the conventional substitute for nectar and pollen in the bee feeding to provide its nutritional needs during winter and stimulation of springchr('39')s larval nourishment. High fructose corn syrup is ...
متن کاملA Biomimetic Sensor for the Classification of Honeys of Different Floral Origin and the Detection of Adulteration
The major compounds in honey are carbohydrates such as monosaccharides and disaccharides. The same compounds are found in cane-sugar concentrates. Unfortunately when sugar concentrate is added to honey, laboratory assessments are found to be ineffective in detecting this adulteration. Unlike tracing heavy metals in honey, sugar adulterated honey is much trickier and harder to detect, and tradit...
متن کاملRapid Screening of Multiclass Syrup Adulterants in Honey by Ultrahigh-Performance Liquid Chromatography/Quadrupole Time of Flight Mass Spectrometry.
Honey adulteration with sugar syrups is a widespread problem. Several types of syrups have been used in honey adulteration, and there is no available method that can simultaneously detect all of these adulterants. In this study, we generated a small-scale database containing the specific chromatographic and mass spectrometry information on sugar syrup markers and developed a simple, rapid, and ...
متن کاملDetecting Adulterated Commercial Sweet Sorghum Syrups with Ion Chromatography Oligosaccharide Fingerprint Profiles
Some commercial sweet sorghum syrups can be fraudulently or accidently adulterated with inexpensive sugar syrups, particularly high fructose corn syrup (HFCS) or corn syrup, and sold at a relatively low market price or even mis-branded. This undermines the economic stability of the current small-scale producers of food-grade sweet sorghum syrup as well as the developing large-scale bioproduct i...
